What is Milk And Milk Products?
Milk and milk products have been a part of our diets since the dawn of civilization. The value of milk to human health has long been recognized, providing essential nutrition to infants and growing children as well as adults in all stages of life. Milk is an excellent source of calcium, protein, phosphorus and other important minerals; vitamins A and D are added to dairy products such as whole milk, reduced-fat (2%) milk, nonfat/skim milk and low fat yogurt for extra nutritional value. In addition to its key role in physical growth during childhood development, research indicates that regular consumption of dairy products can reduce the risk for certain chronic diseases later in life including heart disease, stroke, diabetes and some forms of cancer. The American Heart Association recommends two or more servings per day from the Dairy Group which includes fat free or low fat versions such as skim or 1% cow’s milk or fortified soy beverages; fat free or low fat yogurt; cheeses with 5 grams of total fat or less per ounce (including light string cheese); cottage cheese made with 2 percent skimmed milk; ricotta cheese made with part-skimmed milk. It’s recommended that individuals consume three cups (or 24 ounces) per day from the Dairy Group: one cup at breakfast time such as cereal topped with ½ cup nonfat/skimmedmilk; one cup at lunchtime like a turkey sandwich on whole wheat bread accompanied by 8 ounces plain low-fat yogurt sprinkled with nuts for crunchiness; one serving at dinnertime like mashed potatoes prepared using ¼ cup nonfat/skimmedmilk instead of butter plus grated Parmesan cheese melted over top.
