Major intermediary products in the potato industry include flakes, flour, and starch. Potato flakes and flour are used in confectionery and processing industries to make various potato-based snacks and dishes, such as potato chips, mashed potato, and potato pie. Potato starch is commonly used in the paper and textile industries as well. Starch serves as a stabilizer, binder, filler, texture enhancer, and gelling agent. Potato dehydrated products are lightweight, easy to transport, and require less storage space. They typically have a maximum shelf-life of around 18-24 months.

The global export of potato flakes, flour, etc. was $282.72 million in 2004—a 26 percent growth compared to the 2001 level. In terms of volume, global export amounted to 272,855 tonnes in 2004—a 9 percent growth compared to the 2001 level. The top five countries accounted for 82 percent of the total world export.
The Netherlands is the largest exporter globally, processing more than 40% of its raw potatoes. Comparatively, India and Pakistan process less than 5% of their raw potatoes.
