It is an agricultural product known as green coffee that holds considerable value in global trade. Because of its caffeine content, it can provide a stimulating effect on individuals and is widely consumed across the globe.

Ampalaya, also referred to as Bitter Melon, is a plant that grows well in tropical countries such as the Philippines. Despite its bitter flavor, it is commonly used in Filipino and Asian cooking

Our objective is to utilize unused ampalaya seeds to produce ampalaya coffee. Although unorthodox, our research suggests this idea has great potential. If successful, it could discourage people from consuming nutritionally lacking commercial coffee and offer an inexpensive and medicinal substitute.
